With their basic Pinot Noir already displaying classic Burgundian overtones, it is not surprising that when treated in the same way as top level red Burgundy, with open wooden fermenters and punching down of the cap, this bears more than a passing resemblance to the old country. Rich, succulent red fruit with a fine backbone of tannin and oak, this is highly recommended.

"Best of all is the Bishops Head Reserve Pinot Noir from Waipara (available from Private Cellar, www.privatecellar.co.uk), well worth the £16.30 being charged for it. Aged for up to a year in French oak, this is an exciting cross between a Burgundian and New World style, with much of the sophistication of the former but all the berry fruit and warm toast characteristics of New Zealand.
