There are few regions in Australia whose wine styles are unique and therefore deserve classification along the lines of an Appellation Contrôlée system, however Hunter Valley dry Semillon is definitely one such. Unlike any other Semillons, they change and evolve over incredibly long periods retaining their waxy flavour and vibrant acidity but gradually deepening in colour and flavour until they become venerable oldies. Currently full of vivacious greengage fruit with hints of honey and citrus, tight and restrained on the palate this is giving glimpses of what it will become in the future. Gorgeous.
