As the name implies, this is white Champagne made 100% from red grapes, here a blend of Pinots Noir and Meunier. Most of the work is still done by hand, from picking to the famous riddling, almost entirely mechanised in the big houses, to disgorging. All Champagnes benefit from a bit of bottle age, and the Chauvets deliberately release their wines slightly later than their neighbours to ensure an extra degree of flavour. Rich, biscuity, smooth, with a hint of creamed white fruits, this is a fabulously stylish Champagne.
