There aren’t many producers in Bordeaux brave enough to make sparkling wines from their precious grapes, but then again, there aren’t many producers like Martin Krajewski at Château de Sours. Using a blend of Merlot and Cabernet Sauvignon, and using traditional methods of secondary fermentation in bottle, he has made a luscious strawberry fruited fizz with a fine mousse and lovely balancing acidity. Very refreshing.
