Richard Hilton’s Pax Verbatim venture continues to break new territory in our appreciation of South African wines. Whilst clearly not from Condrieu, his Viognier is nonetheless wonderfully linear with a burst of ripe, tropical fruit behind the richness, showing Richard’s classical, Burgundian training.

"My favourite wine at the moment, part of our new wine list, is Pax Verbatim "Rockwater Fountain"Viognier 2009, we had been doing it for the last year and a half and it went down very well. It is medium bodied, lightly oaked (5% new French oak), soft, fragrant and with beautiful flavours of white peach. Lively aromas of blossom on the nose followed by an exquisite and delicious mouth feel and balance. Great match with our Lobster Salad."
