2007 Domaine Pommier 1er Cru Côte De Léchet, France (12.5% volume)
Tip-top Chablis, this, from Denis and Isabelle Pommier's increasingly eye-catching domaine. A typically keen mineral acidity is balanced by the gentlest use of oak, leading to elusive hints of honey and whispers of toasty brioche. A delicious partner to sushi, it will continue to develop.
