Domaine Pommier

An extremely hard working couple, Denis and Isabelle Pommier started to build their Domaine in 1990 with an inheritance of only two hectares of family vines. Today, their holding of thirteen hectares comprises both village and 1er Cru vineyards.

The Pommiers pay a great deal of attention to the health of their vineyards, working with lutte raisonée methods and only using natural products. Their belief is that if they ensure the best quality of fruit arrives in the winery, nature will do the rest and minimal intervention will be required.

This philosophy of minimal intervention also extends to the use of wood and their Chablis is fermented and matured in stainless steel tanks with only up to 20% being fermented in two or more year old casks, when Denis believes the wine can handle it, whilst up to 40% of their 1ers Crus will be fermented and matured in two or more year old casks.
