Pax Verbatim
Having cut his teeth in Burgundy working in the vineyards, treading grapes in the winery and with brief spells learning the ancient craft of coopering with the likes of Olivier Leflaive, Louis Latour and Domaine Jacques Prieur, Briton Richard Hilton moved to the vineyards and wineries of South Africa in 1996.
Richard's aim is to refine the technique of matching varietal to vineyard site and, having garnered local knowledge working for well known South African wineries, he set up his own winery, Pax Verbatim, in 2003.
He buys only the best, low-yield fruit in order to achieve his goal, making just Viognier and Shiraz. Production is very limited and the demand for his wines is high both in South Africa and here in the UK.
Here we offer his Pax Verbatim Viognier, a sell-out wine when we show it at tastings.
