11th Century Château de Fèsles is at the heart of Bonnezeaux, an area better known for its noble rot derived sweet wines, but half their vineyards are dedicated to light wines, particularly from Chenin Blanc, which has a great affinity with oak. Here old vine fruit is part-fermented in tank with the rest in a mix of large oak and acacia barrels to round the fruit without dominating it with oak flavours.
