Chablis Domaine Watson

Lawyer-come-winemaker Chris Watson and his wife Liz Watson manage this micro-Chablis property from afar with the day-to-day management in the hands of well-known Chablis practitioners the Dampt brothers, who oversee the growing season whilst Chris is lawyering in London.

Vineyard and vinification

The fruit for this wine comes from just over 0.5 hectares of steep south-facing Kimmeridgian limestone in Vaudecource, near Chichée, located next to Premier Cru Vaucopin. Ageing is in stainless steel and seasoned oak and while Chris and Liz are not in the vineyard every day, they decide the blend every year, so it is still very much their wine. Chris is so immersed in the region that he was made the first Pilier Royal for the United Kingdom – or senior member – of the Confrérie Les Piliers Chablisiens.

Wines

The high proportion of Kimmeridgean clay and oolitic oysters give the wine a strong and traditional Chablis style of flinty, smoky and aromatic character. Domaine Watson Chablis is weightier than many village Chablis – although as the vines are sited between two Premiers Crus this may come as no surprise. We at Private Cellar believe their Chablis to be absolutely excellent value for money.
