Archives illustrate that the wine produced around the château was renowned for its quality and finesse. Soil analyses confirm this and, in 2008, an idea began to germinate between several generations of the family: to revive, in full modernity, the wine-growing past of the Domaine. The location, the family’s high standards and their choice of best practices in the vineyard will always ensure the highest quality grapes from this plot, Le Saut de Loup, which charmingly translates as a ‘ha-ha’ in English.

The gorgeous Château de Demigny is situated on the wrong side of the tracks, so to speak, parallel with Chassagne Montrachet but some way east, and as a result it is classified as a humble IGP rather than Appellation Contrôlée Bourgogne – but don’t be fooled, it is classic white Burgundy! Very pale with a nose of white stone fruits and white pear, fresh and racy with a juicy citrus burst; on the palate bright and fresh with a hint of green spices and white pepper, again a white pear note, racy and fresh with a lovely bright finish. Delicious.
