Unusually for Chardonnay, winemaker Matt Krone divides the fruit into two prior to fermentation, with one half being whole-bunch pressed and the other half destemmed and crushed, which gives the finished wine more phenolics and tannins, adding to the mouthfeel. Both lots are then fermented and aged in barrels, one third of which are new, with regular lees stirring for added texture.
